One of my favorite meals. It is very creamy and delicious! I served this for my dad and brother a couple of weeks ago and they loved it.
*Dairy-free, Gluten-free, and Grain-free. Whole30 and Paleo approved.
Thai Green Curry
Serves 1-2
Ingredients: coconut oil, ghee/butter, coconut milk, green curry paste, vegetables {carrots, broccoli, bell peppers, mushrooms, cauliflower, etc.}, cooked chicken {or any other protein}, basil, lime or lemon juice, salt, and pepper
On the stove in a medium-large skillet add:
•1/2 Tbsp coconut oil {optional}
•1/2 Tbsp ghee/butter {optional}
•1/2 a can coconut milk
•1-2 Tbsp green curry paste
Mix together then add:
•1-2 cups chopped up vegetables
Let simmer for 5 minutes
Then add:
•1-2 cups cooked chicken or any other protein
Simmer for another 5-10 minutes until the vegetables are cooked
Then add:
•3 Tbsp of chopped up basil
•juice of 1/2 a lime or lemon
• salt and pepper to taste
Cauliflower Coconut Rice
Makes 4-5 cups
Ingredients: cauliflower, coconut shreds, coconut oil
Chop up a head of cauliflower into 4-5 pieces. Steam for 10-15 minutes. Do not steam the cauliflower too much. It's better to have it more on the underdone side. Then pulse in a Cuisinart or any food processor until it resembles rice.
Then add:
•1/2-2/3 cup coconut shreds {optional}
• 1/2 Tbsp coconut oil {or butter}
*Serve the Thai Green Curry over the Cauliflower Rice {Can substitute brown or white rice}
