The Medicinal Chef's Jerusalem artichoke soup

Let’s start with a little warning. When you first try this soup you may think I have played an evil prank on you. Because initially it may feel like digestive warfare has unfolded and you will feel bloated and gassy afterwards. But what you are experiencing is a massive feeding of the good bacteria in the gut, which will cause the bacterial colony to grow and strengthen.



The long-term benefit of this is that bloating will ease and many aspects of digestion and digestive health will improve. Another odd thing: these vegetables are not artichokes and have nothing to do with Jerusalem. Weird!

Jerusalem artichoke soup

Prep: 5 min
Cook: 30 min
Serves 2

1 large white onion, finely chopped
2 garlic cloves, finely chopped
1tbsp olive oil
500g Jerusalem artichokes, skin-on, chopped
500ml reduced-salt vegetable stock, plus more if needed
Chilli oil and chilli flakes, to serve (optional)

1. In a large saucepan, sauté the onion and garlic in the olive oil, until the onion softens. Add the Jerusalem artichokes and enough stock to cover. You can always add more if the soup is a little thick, but watery soup is just like gruel!

2. Simmer gently for around 20 min, until the artichokes have softened. Blend into a thick, smooth soup, adding more stock if you would like it thinner. Serve with a drizzle of chilli oil and a sprinkle of chilli flakes (if using).

Tina tries... Up close and personal

In her first ever gym session, Tina is put to work by her personal trainer…
I’m nervous about meeting my personal trainer for the first time. My most pressing worry is… argh, what do I wear?

My trainers are caked in mud, as the last time I used them was for gardening, and my trackie bottoms are stored safely in a suitcase on top of the wardrobe (they’re certainly going to need an iron!)
But with trainers cleaned and bottoms pressed, I'm ready to meet my nemesis… Nuffield Health’s Lloyd. Turns out he’s a laid-back kind of guy who quickly puts me at ease, but just as quickly puts me to work. Taking into account last week’s MOT and having listened to my goals, he’s worked out a programme for me. I start with a set of exercises, so he can gauge my fitness level (squats, twists, mountain climbing). With each set he ups the challenges. So far, so good as, 20 mins in I'm still standing and confident I can get through this first session without looking like a numpty.

I resist the urge to giggle every time Lloyd asks if I can "feel it in my glutes yet?" I have no idea where my glutes are (I now know they’re bottom cheeks, and yes, I can feel them). I’m also introduced to my core – that’s tummy, mid and lower back, hips, shoulders and neck regions. And, boy, do they get a work out (I’m really feeling it the next day).

Was the workout worth it? Well! I’ve overcome my reluctance about gyming it - I’m even excited about my next session. Best thing is, I’ve realised I can do it. Over the next few weeks Lloyd is going to help me build up my stamina and, to help, he’s suggested I fit in a cardio session. So next week you can read all about my aqua aerobics session. Launching into 2014||Goals


My family are kinda big goal setters.  Well, at least now we are.  Some of us used to do the "New Year's Resolutions" thing, but ya know, somehow those never worked didn't always stick too well.  Enter: goals.  Seriously, making goals has changed our lives.  So, today I'm sharing with you some of our goals.  But before I do that, I've asked my younger brother Denver to share his perspective on goals.
from Denver: "Well goals have been a big-time blessing to me since I started doing them about a year ago. I am the kind of guy who only does things if I make a conscious effort to do them. Some of you out there probably just do great things without thinking but I'm just not that type of person.  I don’t reach my goals nearly all the time, but I've gotten more done with goals than I did without them. Now some people think that everyone that uses goals are just "go, go, go" type of people. But that is not always the case. Some of the most laid back people I know set goals. And it doesn't have to be a major part of your life. One quote that I have always found to be true is, "The people who set goals always get more done than those that don't". So I would just say, goals don't have to be a major part of your life and you don't have to do any, but I really believe that you will get more done and be more purposeful if you do set at least a few."

{Some of our goals for 2014}
Marlin: Have a heart-to-heart talk with each of my children every month.
Becky: Memorize 5 Scripture verses per week.
Chelsy: Memorize the book of Philippians.
Mitchell: Witness to/give a tract to 3 people per week
Allison: Learn to say "no" to some "good" things (in order to have time for the best things).  Implement a budget system.
Carson: Work out 5 times per week. Spend more time with my siblings.
Joshua: Write 1 song per week
Denver: Shoot 1 buck (that would be a "mature buck" instead of a "button buck" he says.:)  Pray for our church every day.
Taylor: Shoot 1 deer.  Study the book of James.
Elizabeth: Journal every day.
Hudson: Read through the Bible.
Rebecca: Start reading my Bible in the mornings (she has been learning to read for a few years and is now at the point where she read the Bible on her own!)
It's always great when we end up having some of the same goals, because it's fun and gives accountability.  This winter several of the boys are studying the Bible together.  They can talk about what they're learning and spur each other on in studying.  With fitness goals, it's fun to toss around workout ideas and ask each other how it's going.  Some of us love running or doing push-ups together.  Many of us are really trying to ramp up our Scripture memory this year, and our Bible Bee guys are always ready to give memorizing tips.  Plus, it's definitely motivating to know that someone might ask you at any time: "Sooooo.....how's your Scripture memory comin' along?:)"

Update on Michael

Thanks to everyone for praying for my nephew, Michael.  His lung collapsed yesterday, so instead of thinking about going home he is going into surgery today.  In the surgery they will take a lung tissue for further testing since they still don't know what has caused this infection.  Please continue praying for full healing for his lungs.  Sometimes this takes a day, sometimes a week.

Paleo Mushroom Salmon Patties and Homemade Emerils


These heart-shaped salmon patties exceeded my expectations in flavor and texture.  They were moist with a perfect balance of spice.  I should not have been surprised as hearts make everything better 

Mushroom Salmon Patties
Makes 2-3 patties

Ingredients: salmon fillet {boneless,skinless, and wild-caught if possible}, onions, garlic cloves, mushrooms, broccoli, Dijon mustard, kale, salt, tomatoes, smoked paprika, Emerils, coconut flour, olive oil, and butter/ghee

First, sauté in a small skillet with olive oil:
•1/4 cup chopped onion

Then add:
•1 finely chopped garlic clove
•2 finely chopped mushrooms
•1/4 cup finely chopped broccoli
•1/8 cup finely chopped kale

Cook covered on medium heat for 5-7 minutes

While cooking pulse your salmon fillet in a food processor until ground up, approx. 5 seconds. 

Then mix together in bowl:

•The ground up salmon
•Cooked vegetables
•1 tsp Dijon mustard
•1 egg white {or whole egg if doubling the recipe}
•1/8 tsp salt
•1/2 tsp smoked paprika {or regular}
•1 tsp Homemade Emerils {recipe is below}
•1/2 Tbsp coconut flour
•1/8 cup chopped tomatoes

Form into 2 medium or 3 small salmon patties {heart-shape optional }. Cook in the skillet over medium in a mixture of olive oil and butter/ghee for 2-4 minutes on each side.

Then enjoy as a burger or w/ cauliflower rice.  Usually I like to add ketchup and mustard to my salmon patties, but these were perfect just the way they are!



Homemade Emerils {or Emeril's Essence} is my family's favorite seasoning.  We use it for grilled fish, BBQing steaks, homemade potato wedges, etc.  It is the perfect everyday spice and makes everything delicious. 

Homemade Emerils

Combine together:
•2 1/2 Tbsp paprika {smoked or regular}
•2 Tbsp garlic powder
•1 Tbsp onion powder
•1 Tbsp cayenne pepper
•1 Tbsp dried oregano
•1 Tbsp dried thyme
•1 Tbsp black pepper
•2 Tbsp salt

Don't be afraid to sprinkle on anything and everything ;)

Update on Michael

Please continue to pray for Michael.  He is still a very sick young man; still in ICU on the ventilator; still needing so very much healing in his lungs and body.  On Tuesday he started having a lot more pain (this from someone who has had constant pain and needing pain meds for the past month) so finally they did a CT scan yesterday and found that his feeding tube had become disconnected which meant that his food wasn't going to his stomach!  They did emergency surgery to correct the problem.    Also pray for my sister, Ruth, his mother who has spent everyday for the past month in the hospital with Michael leaving only for the night (when he is stable) and sometimes to go out to eat with friends or for a walk.  

How to enjoy sprouts beyond Christmas

By now we’ve all heard of kale, and it’s probably the current trend for the curly leaf we have to thank for putting brassicas and their benefits at the centre of the table. But riding on the coattails of kale is, surprisingly, the sprout. Loathed by many and over-boiled by plenty, sprouts are nonetheless increasingly sought after for meals besides the Christmas dinner.



Sales of sprouts are up by 13% to 32million kg in the past 12 months, according to recent research by Kantar Worldpanel. These miniature cabbages are now making their way into smoothies, salads and stir-fries, being charred and roasted through a culinary renaissance. And this increase in sales has led sprouts growers to extend their growing season beyond Christmas, so it now spans from August to April.

Whatever you think of trends, the popularity of brassicas can only be a good thing. Typically, the darker green the leaf, the more vitamins and minerals it contains. They’re packed rich with vitamins and antioxidants, which are essential for keeping your immune system healthy. They give you a potassium boost, which helps keep blood pressure down and are an excellent source of beta-carotene. Importantly for non-meat eaters, they’re a great source of iron, too.

For many, though, sprouts remain the only disappointing part of the festive plate, so why not cook yours a little differently and incorporate them into something other than your Christmas dinner? Unleash their nutty undertones, and discover what all the fuss is about with our easy recipe.


Beef and sprouts stir-fry
Pre 10 min
Cook 20 min
Serves 4

Ingredients:

300g Brussels sprouts, shredded or thinly sliced
1tbsp toasted sesame oil
500g lean beef, cut into strips
Bunch spring onions, sliced
2 garlic cloves, crushed
¼ head cabbage, shredded
Juice 1 lemon
4tbsp sweet chilli sauce
2 x 250g packs ready-to-serve steamed basmati rice, to serve


Method:

1. Steam the Brussels sprouts until just tender, then set aside.

2. Add 2tsp of the sesame oil to a wok or frying pan and put over a high heat. Cook the beef in batches for 3 min or until browned, then transfer to a plate.

3. Add the remaining oil to the wok or pan. Stir-fry the spring onions, garlic and cabbage for 2 min or until soft. Put the sprouts and beef back in the pan, with the lemon juice and sweet chilli sauce and cook, stirring, for 1–2 more min. Serve with the steamed rice.

Easy variation Replace the lemon juice and sweet chilli sauce with 2tsp grated ginger and 3tbsp reduced-salt soy sauce.

Top tips when shopping for sprouts

Choose firm, fresh-looking and brightly coloured veg that smell fresh and not ‘cabbagey’. Avoid any that are limp and browning at the edges.

Store in the fridge for up to four days. Sprouts on the stalk will keep in a cool place for several weeks.

Eat eight sprouts for a portion of your five-a-day

Cook Finely shred sprouts, then stir-fry in a little groundnut oil with garlic, ginger and lemon zest. Finish with a squeeze of lemon juice.

How to tackle childhood obesity

On holiday in Italy this summer what struck me the most wasn’t the over-sized handbags and under-sized bikinis on the beach, but the size of the children.

While piccola toned mammas promenaded along the sand it was striking just how many weighty children, both young and older, were struggling along behind.


In just one generation traditionally ‘slimmer’ nations such as Italy appear to be catching up with our statistics (one in three children under 15 in the UK is now overweight or obese). Excess snacks and sugar-loaded drinks between albeit homemade (and delicious) meals are some of the main culprits.


These unnecessary calories play a major role in our childhood weight issues in the UK, but we can also factor in over-sized portions at mealtimes, a reliance on takeaways and ready meals and a tendency for parents to reward, cajole, bribe and comfort offspring with treats.


So what can we do, when the food environment and social climate of child-led parenting is everywhere we look?


We can encourage the food industry to maintain its current push to reduce sugar, shrink serving sizes and market healthy choices more positively.


But the bottom line is that as parents and carers we have to take control of the what, when, where and how much we feed our children. We need to set examples of good eating habits ourselves, we need to learn to say ‘no’ and face the tantrums that come with initial refusal to further fuel the over-indulgence line.


This isn’t easy, but then breaking any entrenched behaviour isn’t easy, whether it’s giving up smoking, giving up a friendship that has turned bad or giving up an inactive lifestyle.


As a life coach friend of mine once told me: ‘People can either change their lives and feed their kids better, Amanda… or not.’


Once you own up to and embrace the consequences of the ‘or not’ option, which include being complicit in setting your children up for furred arteries, early onset of type 2 diabetes, fallen foot arches, potentially poor self-esteem in teenage years and adulthood, raised blood pressure and increased risk of stroke, then the short-term aggro and hassle attached to taking action and being the ‘baddie’ for a few months pales into insignificance.


I’m strict with my children. I tried being reasonable, allowing dinner in front of the telly one day a week, having biscuits in the house believing they’d know when enough was enough, taking them shopping with me thinking they wouldn’t try to bludgeon me into falling for the special offer on family-size chocolate bars, but it didn’t work.


They’re kids and I’m the adult and now I behave like one. I plan meals, try to cook them myself (or when there isn’t much time ‘assemble’ them - hummus, pitta, chopped carrots and so on), and I insist on sitting at the table, regardless of what they are doing in the minutes before mealtimes.


They often kick off, they often say I’m mean, they often probably wish I wasn’t so flipping strict, but if I’m not in charge of what my children eat now and don’t try to introduce them to a variety of meals, give them vegetables, feed them fruit and insist on trying things quite a few times before declaring they don’t like them… then who will?


Combine this approach with being active whenever we can and, at the moment at least, I can say my kids are on the right side of the weight line.


Who knows how they’ll live their lives when they’re older? They may decide to feast on burgers and chips for ever, but that will be their decision and by that time hopefully memories of home will prevail and they’ll remember that I did at least try to do my bit and that sometimes mums do know best.
