Dairy-Free Pesto


I love pesto, however, I am not a huge fan of the taste of olive oil and I am allergic to milk, thus I can not have cheese. So I experimented with coconut oil and omitted the cheese.  I loved how it turned out and I've already made some fun, tasty dishes with it :) 

Pesto
Makes approx. 2/3 cup

Ingredients: basil, nutsgarlic cloves, salt, pepper, coconut oil, olive oil, and lemon juice {optional}

In a food processor place:
• 1 cup basil {compacted/pushed down}
• 1/2 cup nuts {I used my soaked and dehydrated almonds and macadamia nuts; pine nuts and walnuts are also great for pestos}
• 2-3 garlic cloves
• 1/3 tsp salt
1/4 tsp pepper 
• 1/4 cup melted coconut oil {can sub olive oil} 
•2-4 Tbsp olive oil {can sub coconut oil :) }
• 2-3 Tbsp lemon juice {optional}

Pulse together until well blended and creamy

*Optional: Add1/2 cup Parmesan or Romano cheese
*Store in the fridge or the freezer

Then have fun creating meals with your pesto. You can create pastas, pizzas, or a Mushroom Cauliflower Bun Pesto Stack like me :)


Update on Michael

In my sister's words, here is the latest update on Michael, who was diagnosed with ARDS yesterday:

I'm gonna try to explain what is going on in Michaels lungs in some simple terms.


Our little bit of research shows that ARDS is caused by a number of things which include sepsis and blunt trauma to the head. (see note below) Apparently because of the things Michael has gone through, there is damage in his lungs. Within the lungs there are a bunch of alveoli that inflate when air is inhaled. Michael is having a hard time taking deep breaths, so the alveoli are not inflating properly. When the alveoli do not blow up properly, they become scarred and will eventually harden, creating unhealthy lungs. The respirator is now doing the breathing for Michael, allowing his lungs to rest and heal. The respirator also keeps some pressure on the lungs constantly which helps the alveoli to inflate and deflate properly. With some time, his lungs should heal and he will be able to breathe on his own.

Tomorrow the Dr. plans to install a trachea and a feeding tube. This will allow Michael to come off sedation and to interact with us quite freely. Altho he will not be able to talk, he will receive physical therapy, will be able to use his phone, a computer etc. This all seems so surreal to us right now, because we had pretty high hopes of being discharged from the hospital in a few days. The Dr is saying in about 5-10 days they should get a good feel for how quickly the healing is occurring. Beyond that we are looking at time at a hospital rehab center.
  We experienced a wide range of emotions today. Through it all we feel very "held" , we are still believing in our great big God, we KNOW He is who he says He is and that He can do what He says He can. " When I am afraid, I will trust in Him".

(Michael had sepsis from an injury on his leg which hadn't healed properly and also received an injury to his head while on a canoe trip.  That whole story on how he got to the hospital while on a canoe trip out in the sticks with little cell phone reception is a miracle in itself!)

So thanks for your continued prayers. It means so very much to know that a host of friends, known and unknown, are joining us in praying for Michael.  Most of all, we are rejoicing in serving a God who hears our prayers and can still do miracles.

Q&A with the Hemsley sisters

Jasmine and Melissa Hemsley, aka Hemsley+Hemsley, are hipster food bloggers-turned authors. Here they talk to HFG about their approach to food and their new partnership with Riverford Farm. We also asked them to tell us what we’ll all be eating in 2015…

Tell us about your cooking ethos
Our approach to healthy eating keeps things as close to nature as possible. This means we eat meat and vegetables that are organic, wild or biodynamic or come from a source that champions natural food. Our food is simple to make, delicious and nutrient rich – and it’s also grain, gluten and refined-sugar free.

How did the partnership with Riverford come about?
Our mum introduced us to Riverford about 10 years ago, even before we started our company Hemsley+Hemsley, and we’ve enjoyed their organic produce ever since. The provenance of the ingredients we use is very important, so working with Riverford’s veg-obsessed founder Guy Watson was a natural match.

What was your inspiration for the recipes?
The H+H Riverford recipe boxes are the perfect option for the health-conscious, food lover, allowing you to cook nourishing, delicious seasonal meals every night of the week, and all in an hour or less! By focusing on fresh, seasonal produce, you’re able to experiment with different ingredients, try new flavours and access nutrients from produce that is in its prime.

What swaps/alternatives/tricks did you use to make these recipes healthy?
A lot of our them are inspired by a family member or a friend, or from a client requesting that we reinvent their favourite dish to make it healthy. The beauty of these dishes is that there is no compromise on flavour, but they are better for you.

Our recipes for the boxes include a sausage ragu with celeriac spaghetti – celeriac is sliced into spaghetti instead of the starchy, refined, wheat-based pastas traditionally associated with a ragu. Our steak and kale salad is accompanied with celeriac chips and our goat’s cheese and beetroot risotto uses quinoa in place of rice. These nutritious ingredients will keep you feeling satisfied for longer while being nourishing.

How have you cut grains, refined sugar and/or gluten from your diet?More easily than you think! As well as replacing pasta with spaghetti spirals made from celeriac or courgettes, we make our own bread (we have two recipes in our book, The Art of Eating Well), have swapped regular noodles for buckwheat (gluten-free) and we also make noodles from carrots and cucumbers! You can also substitute rice with broccoli or cauliflower rice. We use whole natural ingredients like cooked beans in brownies and cakes for a lovely, rich texture.

What food trends are you expecting to see in 2015?We anticipate that 2015 is going to be a big year for the spiralizer! A secret weapon for the health-conscious cook, the Hemsley+Hemsley Spiralizer (launching this month) is useful for packing your meals with nutrient-rich vegetables. It’s also a delicious way to replace refined and glutinous foods such as pasta and noodles.

Use it to prepare some of The Art of Eating Well favourites, such as Courgetti or Celeriac Ragu, Sesame Cucumber noodle salad or Vietnamese Pho Soup.

More than anything, we hope to see people cooking even more because there’s nothing better than home-cooked food made with love.

How to pack a lighter picnic

Everyone has fond memories of picnicking as a child because, quite honestly, when the sun’s shining, what better way to spend an afternoon than packing up the hamper and heading to the park/seaside/back garden? Picnics do come with a health risk, though (high-fat sausage rolls, cakes, fizzy drinks…), so to celebrate National Picnic Week (16–22 June), we’ve put together some of our favourite tried and tested recipes for a healthier outdoor feast.

Cheese and chutney scones
These are super tasty warm from the oven, so you’ll have to try your best to save some for the hamper!

Prep 10 min
Cook 20 min
Makes 12

30g low-fat spread, plus extra to grease
350g self-raising flour, plus extra to knead
75g reduced-fat mature cheese, grated
1tsp dried sage
250ml skimmed milk
75g caramelised red onion chutney

1) Preheat the oven to 200°C/fan 180°C/gas 6. Rub the spread into the flour to form fine crumbs. Add three-quarters of the cheese and the sage and mix well. Add the milk to form a soft dough.
2) Lightly knead the dough on a well-floured surface and use a cutter to make 12 scones. Put them on a greased baking tray, spread chutney over the top of each scone and add a sprinkle of the remaining cheese.
3) Bake for 17 min or until golden (see picture, above)

Per scone: 141kcal, 2.5g fat, 3.8g sugar, 0.5g salt


Portuguese chicken
This will add a punchy flavour to your picnic and it’s great for eating with your fingers. Don’t forget to take along the wet wipes…

Prep 5 min, plus marinating
Cook 40 min
Serves 8

2tbsp hot peri peri sauce
2tsp olive oil
Juice of 11⁄2 lemons, plus 1 lemon, thinly sliced with pips removed
11⁄2tsp dried oregano
600g skinless chicken breast fillets
600g skinless and boneless chicken thigh fillets
2tbsp flatleaf parsley, chopped

1) Combine the peri peri sauce, oil, lemon juice and oregano in a large bowl.
2) Cut each chicken breast into three pieces and the thighs into two or three, depending on their size. Add to the marinade, cover and chill for 3–4 hr or overnight.
3) Preheat the oven to 200°C/fan 180°C/gas 6. Line a baking dish with baking paper and arrange the chicken in a single layer. Scatter over the lemon slices and cook for 30–40 min or until cooked through.
4) Transfer the cooked chicken to the container you’ll be taking to the picnic and immediately store in the fridge, uncovered, until chilled. Keep cool until ready to eat and sprinkle with parsley just before serving.

Per serving: 172kcal, 3.8g fat, 0.4g sugar, 0.5g salt


Leek and courgette quiche
Quiche is traditional picnic fare, but our madeover version has fewer calories and less fat (including saturates).

Prep 10 min
Cook 1 hr 15 min
Serves 6

Cooking oil spray
320g ready-rolled, reduced-fat shortcrust pastry, defrosted if frozen
1 medium leek, thinly sliced
2 medium courgettes, thinly sliced
1 garlic clove, crushed
5 eggs
5tbsp skimmed milk
50g goat’s cheese, crumbled
Fresh herbs, to garnish

1) Preheat the oven to 200°C/fan 180°C/gas 6 and lightly spray a 24cm fluted tin with oil. Roll out the pastry so it’s slightly thinner, then use it to line the tin, trimming any excess pastry with a sharp knife to neaten the edges.
2) Put the flan tin on a baking tray. Cover the pastry with a sheet of baking paper, then pour in baking beans or rice and bake for 15 min. Remove from the oven and discard the beans or rice and paper, then bake for a further 5 min or until golden.
3) Meanwhile, put a large frying pan over a medium heat and spray with a little oil. Add the leek and courgettes and cook for 15–20 min until very soft, stirring occasionally – if necessary, add 1–2tbsp water to help cooking. Add the garlic and cook for a further 2 min, then spoon the mixture into the baked pastry case.
4) In a jug, whisk the eggs with the milk, then pour over the leek and courgette mixture. Sprinkle with the goat’s cheese, then bake for 25–30 min until the filling is set. Remove from the oven, then leave to stand in the tin for 5 min.
5) Garnish the quiche with the herbs, then slice.

Per serving: 334kcal, 18.1g fat, 8.8g sugar, 0.8g salt


Mangetout salad
Take this easy green salad along to go with the chicken or quiche. You don’t want it to go soggy, though, so toss the leaves in the dressing at the last moment.

Prep 5 min
Cook 2 min
Serves 4

325g mangetout
100g bag mixed salad leaves
1 cucumber, sliced into ribbons using a vegetable peeler
2tbsp snipped fresh chives
2tbsp balsamic vinegar

1) Blanch the mangetout in a pan of boiling water for 1 min or until bright green and tender-crisp. Drain in a colander, then refresh under cold running water.
2) Put the mangetout in a bowl with the remaining ingredients and toss to combine, then serve.

Per serving: 49kcal, 0.4g fat, 6.6g sugar, 0g salt

Update on Michael

Yesterday they took Michael off the ventilator!!    He is very weak; he could only speak in a whisper when they first took him off the ventilator.  Can you imagine waking up and realizing that an entire week had gone by without you knowing about it?
Join us in praising God for His great work and please continue praying for healing and  strength.  Although Michael woke up with thoughts of when he would go back to work, he has a long road of recovery ahead of him.

January Concert Dates!


Since we have blog readers all across the miles, I thought I'd post our schedule on here each month so that those of you who may live nearby to our concert locations can possibly make it to a concert! 
And yes-we did make it out the door, on the road, and headed toward warmer weather, yesterday, at 2pm! =) Our first concert last night was a little rough (with the Christmas Play, holidays, and lots of company last month, our practice time was nearly non existent) but we made it! =) We're thankful that we finally did get everything packed and ready and although we already miss home its good to be on the road and have the preparation for leaving, behind us.

My Paleo Birthday {Carrot} Cake


It was my 24th birthday yesterday and for my birthday present to myself I made a mini heart-shaped Paleo Carrot Cake and cupcakes.  They turned out way above my expectations and even my family and friends loved them.  For the cake, I used a blend of Elena's Pantry and The Food Lovers Kitchen Carrot Cake Recipe.  In order to make the frosting dairyfree, I used Bellatrix Nutrition's coconut almond frosting with my own little flare.  My complete recipe is below.

Carrot Cake
Makes 24 cupcakes or one 9 inch cake {or 12 cupcakes and one mini cake}

Ingredients: raw carrots, maple syrup, raw honey, coconut flour, almond flour, baking soda, sea salt, Medjool Dates, raisins, vanilla extract, coconut oil, slivered or chopped almonds, and coconut shreds

Peel and shred:
• 3-4 large carrots {3 cups shredded carrots}

In a bowl mix together:
• shredded carrots 
• 1/4 cup maple syrup
• 1/4 cup honey

Put Saran wrap on the bowl and let it marinate in the fridge for an hour.

In a large bowl mix together:
• 5 beaten eggs
• 2 tsp vanilla extract 
• 1/2 cup melted coconut oil
• 1 Tbsp maple syrup

Add:
• 4 chopped up dates

• 1/2 cup raisins 
•1/4 cup slivered or chopped up almonds
• 1/4 cup coconut shreds

In a separate bowl sift together:
• 3 Tbsp coconut flour
• 6 Tbsp almond flour
• 1 Tbsp cinnamon
• 3/4 tsp baking soda
• 1/2 tsp sea salt

Combine the dry ingredients with the wet ingredients.  Remove the carrot mixture from the fridge and lightly strain the excess water/maple syrup and honey.  Then stir into the batter.  Pour batter into oiled cupcake tins or oiled two 9-inch cake pans.  {If making a cake, it is best to line with parchment paper for easy removal.}

Cook at 325 degrees for 30-35 minutes  

The cake is done when you insert a knife or toothpick into the center and it comes out clean

Let cake or cupcakes cool completely before frosting {recipe below} 



Coconut Almond Frosting

Ingredients: coconut butter/manna, raw honey, maple syrup, full-fat coconut milk {or regular milk}, vanilla extract, and almond extract

Place in a food processor or mixer:

• 1 cup, warmed to a blendable texture, coconut butter {coconut manna}
• 1/2 Tbsp, warmed to a blendable texture, raw honey
• 1/2-1 Tbsp maple syrup
• 1/2 tsp vanilla extract
• 1-2 tsp almond extract

Blend together until well combined

Add a little at a time till frosting reaches your desired consistency:
 • 1/2 cup coconut milk {a little more or less}


Then taste the frosting and make sure it is sweetened to your liking and you can taste the almond.  Please. tweak the frosting to your liking! :)

Then get creative frosting, decorating, and of course eating guilt-free carrot cake!
