‘Tis the season for a HFG makeover



As part of our mission to Fight the Fads: Make Every Meal Healthier, we regularly feature healthy recipe makeovers in Healthy Food Guide and on our Facebook page. And with the party season drawing ever closer, we thought we’d share a recipe with you so you can indulge in a festive treat or two without overdoing it. Our healthier sausage rolls are made with reduced-fat puff pastry and lean pork mince bulked-up with fibre-boosting wholemeal breadcrumbs – and they taste delicious…


Healthy Food Guide sausage rolls

Cook 20 min
Makes 20

Cooking oil spray, to grease
300g lean pork mince
2 wholemeal bread slices, made into breadcrumbs
1 onion, finely chopped
1tbsp chopped fresh thyme
½tsp ground mixed spice
1tbsp reduced-salt soy sauce
1 ready-rolled light puff pastry sheet (320g)
1 egg, beaten

1Preheat the oven to 220°C/fan 200°C/gas 7. Lightly spray a non-stick baking tray with oil.
2 In a large bowl, combine the mince, breadcrumbs, onion, thyme, mixed spice and soy.
3 Cut the pastry sheet in half lengthways into 2 long rectangles. Divide the meat mixture in half, then put one half along the middle of one pastry strip to form a long sausage. Brush one long edge of the pastry with the egg, then roll the pastry over the filling and seal it together to form a long roll. Repeat with the remaining pastry and filling.
4 Cut each large roll into 10 pieces, then put them seam-side down on the prepared tray. Slash the top of each roll a few times with a knife, then brush lightly with the beaten egg. Bake for 20–25 min until dark golden.
5 Serve warm or set aside to cool, then freeze for up to 3 months. Defrost thoroughly and reheat in a moderate oven until piping hot.

How to get a lean ballerina body

Thighs burning, abs shaking, face a sweaty mess – working for a toned ballerina body is harder than I thought. I’m at Barrecore in Mayfair, London, road-testing the ballet-inspired workout craze that’s got the nation pirouetting with glee at its body-shaping power. ‘It’ll be fine,’ I convince myself as I walk into the studio, recalling my dance training of days gone by. But this is not the toes-pointed, tutu-wearing Swan Lake style of ballet I remember. Ballet shoes and experience are not required for this exercise class – just a willingness to work your body hard.

‘This will hurt – your muscles will shake, they’re supposed to,’ the instructor warns at the beginning of the session. And she’s not kidding. The 60-minute workout is a blend of high repetition pilates and barre exercises that use your body weight and small equipment (light weights, pilates ball, resistance band) to exhaust every muscle group, alternated with stretching – and boy do you need to stretch! It’s these isometric movements (static holds with small contractions) that shape and hone the muscles, improving your posture and alignment – and burn up to 500 calories.

In spite of the pain, I leave the class feeling a few inches taller, tauter and buzzing with endorphins – I even booked myself in for the same time next week. An exercise class that tones the whole body and burns calories, all under the pretence of gracefulness… I'm hooked.

The next day, I catch up with Barrecore founder Niki Rein and ask her to share her ballet-body tips:

What’s so good about the Barrecore way of exercising?
We work the body like dancers do – targeting every muscle in the body, especially the small stabilisers (the muscles that hold the body in place so a desired movement can be performed) to create long, lean lines.

What’s your favourite exercise?
I love our thigh exercise, V Waterski. Stand at the barre, heels together with toes turned out, then lean back and pulse towards the barre. It’s a thigh killer that shapes the inner and outer muscles, stretching and elongating them at the same time. Plus, it lifts the seat, flattens the abdominal wall and sculpts the back.

When is the best time of day to exercise?
Before 10am is the best time as our cortisol (stress response hormone) levels are highest. The amount of cortisol in our bodies naturally reduces throughout the day so we are relaxed by bedtime, but exercise – a stressor – results in the release of extra cortisol from the adrenal gland. By working out in the morning when cortisol levels are already elevated, it gives the body plenty of time to reach the relaxed state needed for deep restorative sleep. Exercising later in the day may disrupt the natural cortisol rhythm. Plus, studies show people who work out in the morning are more consistent exercisers than those who exercise in the evening. 

How long should you wait after eating before working out?
Two hours after a large meal, but it’s fine to have a light snack just before exercise.  Great light snack choices include a handful of nuts, a raw energy bar such as LoveRaw, or even a couple of bites of chicken will help you burn fat and sustain your energy levels during the workout.

What is your favourite post-workout snack?
I love a green vegetable and apple juice after exercising. Workouts cause acidity in the body, so the greens help increase alkalinity, while the sugar in the apple helps improve insulin uptake after exercise. I always aim to get a little bit of protein shortly after my juice, too, for muscle recovery.

What’s your best piece of fitness advice?
Stay mentally connected to what you are doing – try and visualise your muscles working and changing. This will get you working harder and burning more calories.

Chocolate Macadamia Nut Ice Cream {Sugar-free and Dairy-free}

  

I first tried banana ice cream in Door County, Wisconsin from one of my family's favorite custard places. However, the ice cream was only banana, so of course it just tasted like banana and I was not all that impressed.  Yesterday, I tried creating my own ice cream with the banana ice cream idea. The outcome was this chocolaty, rich goodness. You can barely taste the banana and the dehydrated macadamia nuts add such a great flavor!

Chocolate Macadamia Nut Ice Cream 
{Sugar-Dairy and Dairy-Free}
Serves 2

Ingredients:  frozen ripe bananas, cocoa powder, homemade almond milk, nuts or nut-butter {optional}, and stevia {or alternative sweetener like honey or maple syrup}

In a food processor place:
• 2 large frozen ripe bananas {sliced into several pieces}
• 1/4-1/3 cup cocoa powder
• optional: 1-2 Tbsp of a nut butter {or small handful of nuts. I used my soaked and dehydrated macadamia nuts}

Pulse for a minute

Then slowly add until you reach your desired consistency:
• 1-2 Tbsp almond milk

Pulse until well blended and creamy

Lastly, sweeten to your liking with:
• a few drops of stevia {honey or maple syrup}

Once you have the ice cream to your liking serve with your favorite toppings {coconut shreds, cacao nibs, and almond slivers} and eat right away or store in the freezer for later.

Paleo Meatloaf


I have never had meatloaf before I made it this time. I was encouraged to start eating beef because of my anemia and my aunt said the best way to start was to incorporate it into a meatloaf. So, here it is. A turkey, beef meatloaf that is Paleo, easy, and delicious!

Paleo Meatloaf
Makes 1 meatloaf

Ingredients: ground meat {turkey & beef}, eggs, almond flour, coconut flour, onion, kale, bell peppers, chili powder, salt, garlic cloves, oregano, cayenne, paprika, cumin, chili powder, and olive oil

First saute in a skillet with olive oil:
• 1/2 an onion finely chopped 
• 1 bell pepper finely chopped

Saute for approx. 10 minutes on medium low

Add to skillet:
• 1-2 cups of finely chopped kale
• 3 finely chopped garlic cloves
• 1 tsp salt
• 1 tsp oregano
• 1 tsp smoked {or regular} paprika
• 1/2 tsp cayenne
• 1 tsp cumin
• 1 tsp chili powder

Mix all together and cook for a few minutes and then set aside

Mix together in a bowl:
• 2 lbs of ground meat {I used 1 lb turkey and 1 lb beef}
• 3 whisked eggs
• 1/4 cup almond flour
• 2 Tbsp coconut flour {or another 1/4 cup almond flour}

It is easiest to mix with your hands, but you can mix with a spoon if you would like. Don't need to mix too much, just enough to incorporate everything.

Add the veggies and spices to the ground meat mixture and mix together

Form the mixture into a loaf and place into a loaf pan. Spread ketchup over the top of the loaf to cover the top completely.

Place in the oven at 350 degrees for an hour and fifteen minutes. 

Let cool for 10 minutes and then enjoy! :)
